How to Make Mineiro Rice with Costolinha

Start by seasoning the ribs with half the garlic, lemon juice, salt, black pepper and green smell. In a pressure cooker over high heat, gradually brown the ribs, then add the broth already dissolved in the hot water, the bay leaf and close the pan. Cook for 30 minutes over low heat after the pressure is started and turns off. Drain and reserve the water. In a pan, sauté the bacon with its own fat, stirring until golden brown. Add the other half of the garlic, the onion and fry for two minutes. Then pour the rice and fry for another two minutes. Add the rib and cooking water. Season with salt, black pepper and cook over low heat for 20 minutes or until softened rice and water dry. Turn off and let stand for 10 minutes. Mix the green smell and pour into a platter. Serve as you prefer.

Ingredients

  • 1 kg of swine ribs in pieces
  • 4 chopped garlic cloves
  • 1 lemon juice
  • Salt, black pepper and chopped green smell to taste
  • 1 meat broth cube
  • 5 cups of hot water
  • 1 bay leaf
  • 200 chopped bacon grams
  • 1 diced onion
  • 1 and 1/2 cup of washed and drained rice

Preparation mode
